Recipe: Chicken Casserole
This was originally poppyseed chicken. I took the idea and made it my own.
I use:
3 - large cans of Tyson chicken chopped (I thought it wouldn't be good but it really is and I don't have to worry with boiling chicken!) Recipe calls for 5 cups of chopped chicken
1 - 8oz container sourcream ( I use lowfat)
1 can Cream of Mushroom soup (others use cream of chicken or cream of celery up to you).
1 sleeve of Ritz crackers (the recipe calls for 1 1/2 cups crushed and 1/2 cup butter) I use one sleeve and about 2 tablespoons of butter.
2 tablespoons butter - melted to mix with crushed ritz crackers
Mix the chicken (I use salt, pepper, and seasoning salt), sour cream, and cream of mushroom soup together. Mix crushed ritz crackers and butter and sprinkle over top. The original recipe calls for poppyseeds but I do NOT like them so I just leave them out.
I also go very light with the ritz crackers on one end (my end )
Bake in a 9X13 baking dish for 30 minutes at 350.
I also want to add that I think cheese makes everything better so I also mix in a bit of shredded cheese before I add the ritz topping.
I have no idea what the nutritional values are. But I figure with ff sourcream, healthy choice mushroom soup and chicken it can't be horribly bad, plus I have very few ritz on my portion.
