Yummy meal idea ...
Here is a really easy and very yummy dinner I made last night. It's a crock pot recipe that I made up. I served it in tortillas for my family but I ate it without the tortillas and it was so wonderful!
CHICKEN ENCHILADAS
In a crockpot, place 4 boneless/skinless chicken breasts. Add a can of Cream of Mushroom soup, a can of Cream of Chicken soup, a diced onion, 1/4 cup mild diced green chilis, and 1/2 cup diced tomatoes. Cook on low for 8 hours. Shred the chicken with a fork and let sit in the crockpot for bit to soak up the sauce.
Serve with cheese, sour cream, and olives.
