Crustless Quiche recipe ...

Here is my new favorite recipe! It's a crustless quiche and I even was a nerd and sat down and figured out the nutritional content! CRUSTLESS QUICHE * 3 eggs * 1 1/2 cups skim milk * 1/2 cup Bisquick mix * 1/2 cup melted butter or margarine * 1/8 tsp pepper * 8 bacon strips, cooked and crumbled (I bought a package of pre-cooked bacon and just cut it up into small pieces. Easy!) * 1 cup shredded cheddar cheese In a mixing bowl, combine the first 5 ingredients. Beat on low speed until blended. Transfer to a greased 9-inch pie plate. Sprinkle with bacon and cheese; lightly press down into batter. Bake, uncovered, at 350-degrees for 45 minutes. Let stand for 10 minutes before serving. Nutritional Content: 6 servings Calories: 310 Total fat: 24 grams Saturated fat: 8.6 grams Carbohydrates: 9.4 grams Protein: 12.4 grams If you want to try and make it healthier, you can substitute mozarella cheese for the cheddar cheese. Or use canadian bacon instead of regular bacon. Also, I diced up some tomatoes and threw in there with some diced onions and it was great that way too. I've been trying all different combinations and it comes out good each time. I really like the regular way though! Yum!

Sounds YUMMY!!! It has lots of my favorite things! I think I may try this for brunch tomorrow, b/c I know I'll be sleeping in. This week back at work has been very tiring!

do you use the regular bisquick or the light recipe? I'm trying to see if i can cut some calories/fat out of this recipe so that i don't feel so guilty eating it. Do you ever add any veggies to this? I guess i'm trying a higher fiber approach so that i can poop (oh yuck must every conversation be about poop?) Hugs, ANDI
