PORCUPINE MEATBALLS * 1 pound ground beef * 1/4 tsp salt * 1/8 tsp pepper * 1 egg, slightly beaten * 1/2 cup rice, uncooked * 1 T. onion, finely chopped * 3 T. oil * 14.5 oz. can beef gravy (the recipe calls for one can but I use two just to have some extra gravy!) Mix the first 6 ingredients together and shape into golf-ball size balls. Brown meatballs in oil, then place in a casserole dish; pour gravy over meatballs. Bake, covered, in a 350 degree oven for 45 to 60 minutes or until rice is tender.

Deanna, Let me ask you, do you ever worry about carbs? I was wondering since your recipie calls for rice the meat balls. KAthryn

Hi Kathryn! Yes, I worry about carbs. But I have issues with having really low blood sugars since I'm on a high protein diet. So I have to have "some" carbs with my proteins or I bottom out really bad. And, there isn't all that much rice that shows up in a meatball so I don't worry about it. But I wouldn't have a side of rice with a meal! Deanna
