Crustless Quiche recipe ...

I tried this recipe this weekend and it's YUMMY! One piece of advice though is to put the pie plate on a cookie sheet while it's baking so it doesn't run over. CRUSTLESS QUICHE * 3 eggs * 1 1/2 cups milk * 1/2 cup biscuit/baking mix * 1/2 cup butter or margarine, melted * 1/8 tsp pepper * 8 bacon strips, cooked and crumbled * 1 cup shredded cheddar cheese In a mixing bowl, combine the first 5 ingredients. Beat on low speed for 3 minutes or until blended. Transfer to a greased 9-inch pie plate. Sprinkle with bacon and cheese; lightly press into batter. Bake, uncovered, at 350-degrees for 45 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before serving.

sure you can and you can even use egg substitute if you are so inclined. I bet you could even add in a scoop of protein powder if you wanted to. This recipe seems like it's really easy to play with and add and subtract "stuff" as you'd like. Use turkey bacon to make it less fattening, use "facon" a soy product if you'd like. Add broccoli, spinach, onions etc etc to make it what y ou want it to be. Hugs, ANDI
