Ok everyone. Grouchie Pouchies beware of the crockpot alfredo. WOW is it rich. I could barely eat a half cup. The chicken was very tender but it was so rich. I will let you know if I don't tolerate it well. On the flipside, DH thought it was awesome homestyle cooking. He had it over pasta. He said it tasted like alfredo but would be totally delicious over biscuits. So, I guess it turns out like creamed chicken...without the veggies. He sure liked it. But, my tastes for rich italian foods must have changed becuase I thought the flavor was very intense. He ate a whole plate full.....hehe. Good luck!

Thanks for the heads up...when I make it I will try and cut the richness..maybe some FF cream cheese?? Maybe add some veggies to make it more like cream chicken?? Thanks for the update!

I think maybe cut the butter. I didn't think it need that much. I mean it's a WHOLE stick. Maybe half the butter and light cream cheese??? I don't know, like I said DH liked it and it ended up not upsetting my pouch. Rachael

Thanks - I didn't even notice the whole stick of butter. I usually omit stuff like that anyway because my pouch doesn't love fat too much (unfortunately it doesn't mind sugar and carbs...go figure) The recipe is definetely a good starting point!

The recipe sounds so good. I never had a problem before with rich foods, but yesterday I made some beer cheese soup (I had made it since surgery, with a different recipe) and I go SOOOO sick. I had all the symptoms of dumping (hot flashes, sweating, nausea) for about an hour. I was not a happy camper. I still may make your recipe for the family. I love crock pot recipes!!!

Thanks Rachael for the recipe. I may give it a try, if I think I can tolerate the chicken. I had one successful and one not so successful episode with chicken last week. So far my pouch doesn't seem to mind fatty stuff, but the sugars (banana experience) is another story all together!!
