...and whoever else wants a good crock pot recipie.
Crock Pot Alfredo
8 oz. cream cheese
4 Boneless skinless chicken breasts
1 can cream of chicken soup
1/2 c. butter
1 clove chopped garlic
Italian dressing Seasoning mix(or hidden valley ranch packet)
Combine chicken, butter, garlic and seasoning mix in a Crock-Pot (slow cooker) and cook on low for 6 to 8 hours. (4 is usually enough in mine)
Then add cream cheese and soup, and cook on high until cheese is melted.
Serve over rice or pasta.
The italian seasoning is traditional but my husband suggested a ranch packet. He's a ranch dressing feind.

I'm going to have to definitely get my crock pot out this week. That chicken sounds delicious.
We are on mid semester break this coming week - all three of us, so I'll have time to experiment in the kitchen. I usually just stick with the same ol same ol so I dont' have to think. You've got my mind going on all the possibilities now hee hee
I'm also planning on getting the yard tidied up for winter - lots of pruning and cutting back as it's a jungle out there, everythings overgrown. Plus I've promised Millie I'd finish decorating her bedroom. Hopefully that will count as exercise and I'll loose this week

By the way - you reminded me about rice. I LOVE Barilla Pasta plus for my pasta fix..but I have also found that rice works well too. I make some and just use like 2 tablespoons for myself and spread it out and it's just enough to get my fix.
I have been planning on making this recipie all week, but I went to the store last night to get some barilla plus pasta. It even has protein in it. Hopefully I will tolerate it well and it will feel just like the Olive Garden...without the breadsticks of course.
Another "bread" thing I use is the whole wheat low carb tortillas. I am going to try them in the leftovers for enchilada type things. They also have a good pit of protein in them.
This one is getting made tonight and the crock pot is going on now. Even though we still have stroganoff left!!!! Just the two of us....

The barilla pasta plus is really yummy. I've tried whole wheat stuff before and thought it tasted like cardboard...not this stuff. Just as good as the original. Plus it isn't as sticky!!! It has protein and fiber. I have like 2 boxes of every variety on hand right now... he he. I think they have penne (my fav) macaroni and spaghetti.
