Pinto beans. I buy the dried (I guess that's what you call them) pintos in a bag. (In our stores here they're usually close to the rice and stuff like that.) I wash the beans and then soak them in water overnite. The next morning I pour off the soaking water, put in fresh water-covering the beans well, usually put in either a ham hock or a slab of salt pork and cook all day long in a crock pot. The beans turn brown and become soft. I remove the meat before it starts flaking apart, but a lot of people leave it in because they like the little pieces of meat mixed with the beans. They're absolutely delicious and very nutritious too, high in protein, low in fat. They are rather high in carbs, but it's the good carbs. I almost always make cornbread and also I serve sliced cheddar cheese and a sliced fresh onion to complete the meal.

Being a southern girl...you know how much beans and cornbread are eaten down here!! My husband was ecstatic when I announced I was going to make one of our favorite meals. For so long it's been every man for himself around here, but I too was ecstatic when I discovered I could tolerate them without ing!!.

I would imagine everyone in Dallas encouraged you to speak just so they could hear that lovely English accent!!
