I have a folder on my computer that I save good recipes to. Here are a few as well as some ideas I have borrowed when I did not know what to eat: (these are all borrowed from other messageboards, not my own posts) =========================================== I found a popular recipe for Protein Balls: 1 cup protein powder (I use whatever protein powder I have at the time) 1 cup uncooked oatmeal (not the quick oats, just regular oatmeal) 1 cup peanut butter 1/2 cup sugar free maple syrup or honey (I use less the 1/2c of honey. Mix together well and roll into balls - about the size of a ping pong ball. Store in a tupperwear or ziplock bag in the refrigerator. They have about 10 grams of protein each. (Thanks Mom of Many for sharing!) I actually got this recipe off of the food network website. They are so good you would never know they were not regular peanut butter cookies! 1 cup Peanut Butter, creamy or crunchy (I use peter pan creamy) 1 1/3 cup Splenda 1 egg 1 teaspoon vanilla extract Preheat oven to 350 degrees F. Grease a large baking sheet. In a mixing bowl combine all ingredients. Roll dough into balls the size of walnuts. Place balls on prepared baking sheet.With a fork, dipped in Splenda, press criss cross design on cookies. Bake for 12 minutes. Remove from oven. You can sprinkle cookies with splenda (if you do this it will change the nutritional calculation). Cool slightly. If you are like me and like your cookies right out of the oven they will be EXTREMELY crumbly. Cooling will fix this. I also did some calculating...for the entire recipe there is 1605 calories, 113 Carbs, and 62 protein. The carbs I calculated on the high side because Slpenda has carbs but the package says less than 1 gram per serving - I calculated at 1 gram per serving. These are a great source of protein. Hope ya'll like them as much as I do. Bananas Heat a pan to medium/medium-high. Slice the banana long way's, then across so it's in quarters. Melt some maragrine in the pan, then add the bananas flat side down. Sautee until the banana caramelizes and starts going soft. Flip them over, sprinkle with cinnamon... and cook the other side. Chicken Salad 3 wheatthins with chicken salad at support meeting - YUMMM! (boiled or canned chicken cut very small, cream cheese, hard boiled eggs, celery, green onions, lemon juice all mixed together and rolled in crushed pecans) Eating Ideas tuna mixed with cottage cheese cottage cheese alone egg salad made with light mayo poached egg on half a slice of carb countown wheat toast turkey breast cooked in cream of chicken soup (so it's moist) low fat triscuits toast made with the carb countdown wheat bread and sprayed with olivio rolled up slice of turkey sandwich meat slices of Cabot 50% light cheddar cheese all natural no sugar added peanut butter on low fat triscuits ricotta cheese mixed with tomato paste, parm cheese, italian seasonings (heated) ground turkey (dark and light meat mix-it's moist) browned then I add tomato paste, cumin, salt and stir in a little light sour cream - it tastes taco like. Peanut butter "cookies" (all natural no sugar addded peanut butter, one egg, four splenda packets..... mix, roll into balls and press down with fork, bake 350 degrees for 10 to 15 minutes until they're getting harder... not just like a cookie but a nice treat) Pizza 1# ground meat 1TLB fresh basil (or 1 tsp dried) 1TLB fresh oregano (or 1 tsp dried) 1 clove garlic minced 1/2 pizza sauce 1 pkg. pepperoni add -on toppings of your choice 2 cups pizza cheese mix meat, spices and garlic together and place in 2 deep baking dish (I used 9x13), pushing meat up the sides to form a shell. Bake 350 oven for 40 minutes or until done but not dry. Drain off any excess grease. Put sauce, pepperoni and add on toppings, then spread cheese evenly on top. Bake 400 oven another 10-12 minutes or until cheese is bubbly and melted. Taco Soup 1 lb. ground turkey 1 large sweet onion, chopped 1 large can whole kernel corn 1 can of pinto beans 1 large can kidney beans 1 envelope taco seasoning 1 envelope Hidden Valley Ranch dressing mix 1 quart tomato juice 1 can diced tomatoes Directions: 1. Cook onion in pan 2. Brown turkey in the pan with the onion 3. Rinse and drain all the beans 4. Add all ingredients together in pan and cook for one hour Notes: 1. Yields twenty cups 2. One point per cup in Weigh****chers point system Ground chicken casserole servings 12 1 pound cooked egg noodles 30 oz. Canned tomato sauce 1 small onion 16 oz fat free cream cheese 16 oz fat free sour cream 4 cups kraft 2% finely shredded sharp cheddar cheese 1 pound uncooked ground chicken breast boil noodles,drain.Combine in separate bowl mix cream cheese,sour cream and tomato sauce.Brown meat and onion.Layer in large casserole dish starting with sauce,then noodles.Then meat,ending with cheese.Bake at 350 until bubbly and brown.Great leftovers! +++++++++++++++++++++++++++++++++ Please share your favorite recipes & food ideas. Chicken Cordeon Blue - Kinda ;) Protein 35g; Carbs 2g 8 bone-in chicken breast halves, skinned 1/2 teaspoon salt 1/4 teaspoon black pepper 3/4 cup chicken broth 1/3 cup finely crumbled blue cheese (use the good stuff for this one!!) 2/3 cup half and half or light cream 2 teaspoons cornstarch 2 tblsp finely chopped walnuts toasted Finely crumbled blue cheese for garnish (and extra protein) Place chicken into slow cooker. Sprinkle with salt and pepper. Pour broth over chicken, sprinkle with the 1/3 cup blue cheese. Cook on low for 5 hours or high for 2 1/2 hours. Transfer chicken to a serving plate; discard cooking liquid. Cover chicken to keep warm For sauce, in a small saucepan, combine half and half and cornstarch. Cook and stir over medium hear until thick and bubbly. Cook and stir for 2 min. more. Spoon over chicken. Sprinkle with nuts and additional blue cheese!!

Thanks for this great post Dar. I will certainly use these recipes. Here's a mini one: Pizza - using english muffins (i've just found out they are high in protein and low in other stuff). Toast first then top with anything you fancy, then cheese. Broil until cheese has melted (or put in Microwave). I'm looking forward to trying the protein balls!! yum

Crock-Pot Sour Cream Chicken 3-4 skinless, boneless chicken breast(frozen) 1 can reduced fat cream of mushroom soup 16 oz sour cream, fat free or light 1 pkg onion soup mix or onion/mushroom soup mix H20 to thin out sauce if needed Cook in crock-pot for 5-7 hrs on low or 3-5 hrs on high *add whole small red potatoes and use the sauce as gravy. *put over noodles and tastes just like stroganoff. Easy Cheesy Crock-Pot Chicken 5-6 skinless, boneless chicken breast Thawed 2 can cream of chicken soup-reduced fat 1 can of cheddar cheese soup Salt, pepper, & garlic powder chicken layer in crockpot mix all soups & pour over chicken Cook in crock-pot for 6-8 hours on low Variances:1can cream chicken soup, 1 can cream celery soup, 1 can cheddar cheese soup. or 2 cans cream chicken soup, 1 can broccoli cheese soup. If you do the one with the celery soup tastes kind of like chicken & dressing without the dressing. Also I have found these on the board or on the internet so I cannot take credit for them but they are soooo good!~Missy~
