Chicken Salad Recipe
I like my chicken salad soft so i cook it in a pot of water with celery, onion, carrots and whatever other veggies i have in the house to make a "soup stock" then i strain out the chicken, squi**** up with some mayo (or fat free ranch dressing), mustard, salt, freshly ground pepper and whatever veggies i want..usually carrots, celery and some onion.

I like to use the grilled chicken breast pieces you can buy in the grocery store over by the lunch meat. I mix together some low fat mayo and a tad of mustard. Then chop up some of the chicken and add the mayo/mustard mixture. I also add some very small diced onion, some relish, and some chopped up cashews. It's really good!
