Chicken Salad Recipe

Does anyone have a good recipe for Chicken Salad. I am not allowed to have any carbs (or very low carbs at that) and thought this is something I can just spoon up. Debbie

I like my chicken salad soft so i cook it in a pot of water with celery, onion, carrots and whatever other veggies i have in the house to make a "soup stock" then i strain out the chicken, squi**** up with some mayo (or fat free ranch dressing), mustard, salt, freshly ground pepper and whatever veggies i want..usually carrots, celery and some onion.

Hi Debbie! I like to use the grilled chicken breast pieces you can buy in the grocery store over by the lunch meat. I mix together some low fat mayo and a tad of mustard. Then chop up some of the chicken and add the mayo/mustard mixture. I also add some very small diced onion, some relish, and some chopped up cashews. It's really good! Deanna

HI Debbie, I use the sweet sue canned chicken-low fat mayo-cut celery up very finely, pecans, & cut gapes into 4 pieces. I love this recipe. Although check with your nut to make sure you can have grapes-some say no due to the skin on the grapes. Mines said ok. Hope you enjoy!~Missy~

Yum, I love the idea of nuts and grapes & celery in with the chicken - I'm going to try that tomorrow. I roasted a chicken today so I'm all set. Thanks everyone for the ideas
