Potato Boats!
I tried something new tonight, for dinner... Probably more carbs than necessary, but it was a first-time thing and it was REALLY good... Something I'll do once in a while, maybe, just to make it interesting...
I took a baked potato, halved it length-wise, and scooped out the guts. I put a sprinkle of lowfat cheddar in the bottom, mixed some more cheddar up with the guts and spooned some back in the skins. Then I put a few teaspoons of chili on top and sprinkled with cheese and baked for about 10 minutes. It was awesome!
1 boat (about 1/2 a medium potato) - obviously, these are approximate:
Calories: about 160
Fat: 5
Carbs: 20
Protein: 11
Again, this is higher in carbs than I normally would do, but it sounded so good.. You could also subsitute salsa for the chili and shave off about 5 carbs that way.
