Recipe - Curried Tofu Salad Lettuce Wraps
This is a re-post from the main board. It's one of my favorite lunches. You can also substitute cooked moist chicken instead of tofu. If you don't tolerate lettuce well you can eat this out of a bowl. I tend to like 'wrappy' things. DH eats this wrapped in a big tortilla (the bum ). Original recipe was from Healthy Eating magazine, but I've changed it enough that I can call it my own recipe.
Curried Tofu Salad Lettuce Wraps
3 T. non-fat plain yogurt
2 T. reduced-fat mayo
2 T. prepared mango chutney
2 t. hot curry powder, preferably Madras
1/4 t. salt
Freshly ground pepper to taste
1 14 oz. pkg extra-firm, water-packed tofu, rinsed, drained, and finely crumbled
2 stalks celery, diced
1/2 c. red grapes, sliced in half
1/4 c. sliced scallions
1/4 c. cucumber, cubed
1/4 c. chopped walnuts
lettuce leaves (red lettuce or Boston)
Whisk yogurt, mayo, chutney, curry powder, salt and pepper in large bowl. Stir in tofu, celery, grapes, scallions, cucumber, and walnuts
Served wrapped in lettuce leaves
Makes 6 servings, 2/3 c each
Approx per serving (I have cut the grapes way back, so the carbs and calories will actually be lower):
140 calories, 8 g fat, 13 g. carbs, 7 gr. protein, 2 g. fiber, 241 g sodium
