Any Superbowl plans?
I remember last year fondly. Watching my New England Patriots win another superbowl and enjoying all my favorite football foods.
We had a big party at my house and boy did we lay out a spread and drink some beer. But this year it will be different and I am not as unhappy as I thought I would be.
Football has always been a "food party sport" to me and my family. But I must say being fit and healthy is a way better feeling. I am presently making some really good homemade chili what I will serve with cheese, sour cream and chopped onions as toppers. I have a bunch of those really cute little individual chili/soup crock to serve it in. My DH went a bought a variety of interesting micro brews to put in a ice tub. It should be a fun day of family, friends and football. No longer is food the first of my "f" words...LOL
What are your plans or do you even watch the game?

We are having about a dozen friends over for a super bowl party.
Menu:
Our menu for tomorrow is:
Celery/carrots and salad dressing
Cheese and crackers
Chips/pretzels and onion dip
Guacamole (homemade a la Rich) with tortilla chips
Baked brie (we slice the top off and put all fruit preserves (raspberry - no sugar added) and slivered almonds and put the top back, wrap in foil and bake til heated through)
Heroin Wings (wings dipped in butter and parm cheese basically)
Homemade Chili (an old Weigh****chers recipes from the 80s that is excellent) w/ cheese and sour cream
Beanie weanies (mini-dogs wrapped in crescent rolls)
Magical peanut butter cookies (SF ones - we also add in SF choco chips for fun)
Coronas w/ lime, soda, diet soda, juice, water
I'll be avoiding the carb intensive things of course (chips, pretzels, crackers) and will keep my focus on the vegies, cheese, wings and of course the chili. I will have a few beanie weanies! Love them!
I'm looking forward mostly to seeing friends that I haven't seen in quite a while.
Kathy
Here are some of the recipes:
Heroin Wings
4 pounds chicken wings
1 cup grated Parmesan cheese
2 tablespoons dried parsley
1 tablespoon dried oregano
2 teaspoons paprika
1 teaspoon salt
½ teaspoon pepper
½ cup butter
Preheat oven to 350.
Cut the wings into drumsticks, tossing the pointy tips.
Combine the Parmesan cheese and the parsley, oregano, paprika, salt, and pepper in a bowl.
Line a shallow baking pan with foil (Do not omit this step, or you will still be scrubbing the pan a week later).
Melt the butter in a shallow bowl or pan.
Dip each drumstick in butter, roll in the cheese and seasoning mixture, and arrange in a foil-lined pan.
Bake for 1 hour.
Yield: About 50 pieces, each with only a trace of carbohydrates, a trace of fiber, and 4 grams of protein.
Spicy Turkey Chili
1 pound lean ground turkey
1 medium onion, chopped
16 oz canned diced tomatoes
1 cup canned tomato sauce
1 cup water
1 Tbsp chili powder
2 tsp Worcestershire sauce
2 tsp white wine vinegar
2 piece bay leaf
1/2 tsp table salt
1/2 tsp garlic powder
1/4 tsp ground cinnamon
1/4 tsp ground allspice
1/4 tsp crushed red pepper
Instructions
Spray 3 qt. saucepan (or larger) with non-stick cooking spray. Heat onions and turkey over high heat until turkey is browned. Stirring occasionally. Add remaining ingredients and stir well. Reduce heat to low and simmer, stirring occasionally until chili is thick. Approximately 25-30 minutes. Remove bay leaves before serving.
We do this in the crockpot and either double or triple the recipe. We also easily double the chili powder in it. We like alot of flavor! We serve it with shredded extra sharp cheddar and sour cream.
