Awesome recipe
I used to live in Hawaii and one of my favorite foods when I was there was Kalua pig. It is super, super easy and SOOOOO yummy and SOOOOO tender - we can eat it with no problems!
You just take a pork butt roast (yeah, it's kinda fatty, but it's okay) and put it in a roasting pan fat side up. Add about 1-2 tbsp of liquid smoke and sprinkle kosher salt on top. Cover it with foil and cook in a 300 degree oven for about 5 hours (or until you can pull it apart easily with a fork). After it's cooked, you can pull a lot of the fat out (like the big hunk on the top) and shred it up into very small shreds. THAT'S IT!!!! To make it truly Hawaiian, serve it with steamed cabbage and rice (I can eat cabbage and a small amount of rice, but if you have a problem with it, just make that part for your family).
I'm telling you, this makes its own juice and it is super easy to eat. It breaks apart so easily when chewed - it's SOOOOO good!! You can also use the left over pork for bbq pork sandwiches or whatever (with low carb bbq sauce, of course!)
