What a great, if simple, meal

I've discovered a form of a country breakfast that I just love, provides me with tons of protein, and causes me no problems eating. A one-egg omelette with a strip of turkey bacon and a slice of American cheese inside. Tastes amazing, fairly low in fat (esp. if I use EggBeaters), and 16g of protein. YUM!

Tom, speaking of breakfast, have you ever experienced a chili egg omelette? I use one egg and 1/4 cup homemade chili with a sprinkle of cheese, lots of protein and very yummy as well! Since I just ate my breakfast, I think I will try your idea tomorrow......I love the amount of protein!! Dawn

I've never tried a "chili omelette". I'm not so sure I'd like that... And Kathy - you're right...I forget how much of a gift it is that I can only eat that little bit and be quite full (not uncomfortably so). Thanks to God for WLS!!

I had been doing essentially the same thing with cheese and canned chicken. However, over the last few days, Ernesto (my pouch... ) has decided he no longer likes Egg Beaters. In fact, I made some today for breakfast, took one teeny tiny bite and tossed it. I wound up with half a handful of cheerios and a cheese stick, instead... I have found my new love, though! I bought a bag of frozen shrimp, already peeled and de-veigned. I marinated a few pieces in some EVOO and seasoning, along with a few pieces of fresh broccoli, and then cooked it up in a skillet in about 5 minutes. It was HEAVEN!

Yes, seafood has become one of my staple foods now. I also put lump crabmeat into an egg omelette sometimes. With some shredded cheddar, it is very high in protein and tastes good. With shrimp, I toss it in some alfredo sauce. I know the sauce is hi-fat, but my doc says a little fat's not a big deal. I keep myself lo-fat other times, so sometimes I use the alfredo sauce with shrimp or crabmeat.

Sounds yummy!!! I sauteed two small mushrooms and about 1 tbsp chopped onions in some butter flavored spray and cooked up an egg and shredded 2% cheddar. It was super yummy, too but I could only eat about 1/2 of it. I think I may do your bacon and egg and cheese dealie for lunch today!! Michelle
