Mmmmm.....crab

I bought some canned crabmeat last night and turned it into this cheesy crab dip type thing that I just ate with a spoon. Loaded with protein, low in fat, and VERY VERY GOOD!! The more food I can eat as the weeks pass, and the more creative I can be, it gets easier and easier to leave the old eating habits behind. Its not "easy" yet, but getting easier.

I hear you man! I was always a semi-seafood fan, but now cannot get enough tuna, crab, and shrimp. I also love to cook, so I'm also having fun concocting new recipes. Crab cheese dip sounds awesome. I'm taking the family to Delaware this weekend and am gonna find some fresh crab and try it out. P.S. I agree with you that as time goes by it's been easier to let those old things behind and enjoy the new. (It helps when you're dropping weight too... haha!)

I thought about buying some crab meat, too, but chickened out. I did buy a couple of the Tuna lunch kits. I'm still about 4 days shy of being allowed Tuna but I've felt so good, I thought I'd give it a shot. One kit makes 2 meals for me so I had 1/2 last night and 1/2 this morning for breakfast. Last night, I even ate about 1/2 of a cracker. It was WONDERFUL!!! You know the best part? Eating something that didn't require a SPOON!!! So, how did you make the crab dip?

Yeah, I'm with Becky - give up the recipe, man!! LOL! I'm a huge seafood fan, always have been. I've been eating lots of tuna, the imitation crab, and shrimp. LOTS of protein and OH so good. I get those little pouches with the tuna in them and I can almost (not quite) finish one of those. The little 3 oz cans of chicken are good, too (I know, not seafood, but still) and I get like a string cheese or shredded cheddar (the 2% fat) or some kind of cheese and will melt it on top with some garlic and pepper - YUM! And, if at the last bite I feel like I've got the room, I'll even take a bite of a Ritz with it!!

I'm not cleared to eat real crab yet. I've lived in Maryland most of my life, and we're now solidly in blue crab season. All I can do is whimper sadly. Crabmeat ideas... - tuck it into an omelet - warm it up in hollandaise sauce and drape it across a poached egg - crabcakes! (broiled or baked) - hot crab and artichoke dip - deviled eggs stuffed with crab salad

Oh dear, perhaps I shouldn't mention Cantonese-style scrambled eggs with crabmeat, or she-crab soup, or Maryland crab vegetable soup with a splash of sherry, or crab imperial, or crab-stuffed flounder, or crab fondue with gruyere...

Let me first say to those of you who cannot have crab yet...I didn't consider this, and in so doing inadvertantly made things harder for you, and I'm sorry. I'm wanting pizza more than life itself right now, and if someone started a "mmmm....pizza" thread all about how they ate pizza, I'd be torqued. So, please forgive me! To those who want to know what I did....no recipe, just me throwing a few things together. I took about 1/4 cup of pink crabmeat, about 2 teaspoons of light mayo, some of the crabmeat juice from the can, about 1/8 cup milk and about 1/8 cup of shredded cheddar and threw it all in the blender - blended it (not pureed) - then poured the mix out on the plate. It looked okay, but I wanted it hot. That's when the magic hit....when I heated it in the microwave for about 30 seconds, everything melted together into the perfect crab and cheese mixture! I threw on some salt and another key ingredient...OLD BAY! That's it...that's all I did. But, gosh dang, it was incredible! Tom 443/388/200
