Howdy Folks! How are ya on this fine Sunday? I'm here by my lonesome. Rich is off at work til 5 pm. I am enjoying the quiet. Guess I was in need of some "me" time. I went and did some food shopping late morning and have been cooking ever since. This is the first time I've sat down in probably 3 hours. Can this be considered a workout? Please, say it is so. LOL! I boiled up a big pack of Italian Hot Sausage. I put half in a ziplock and into the freezer for another day. They are already cooked now and just need to be slapped on the grill or a fry pan to thaw and brown. The other half I'll grill later. Then I cooked up some peppers and onions to go with said sausage. I slice up the green peppers and onions and then sautee in butter (yep, the real thing****il soft. Then I throw in salt cubes... aka, chicken boullion cubes. Way too much sodium but boy does that add great flavor to the vegies. Next, I peeled, seeded and grated a cucumber and then salted it and let it drain on paper towels. I minced and mashed a few cloves of garlic. Mixed that together with greek thick yogurt, some dill, red wine vinegar and olive oil and made my own tzatziki sauce. I think sliced some red onions very thin. Put them in a small ziplock with red wine vinegar, olive oil, salt, pepper and oregano. Then it was on the ground beef. I mixed into that salt, pepper, garlic powder, onion powder, allspice, cumin, and oregano. I am making "gyro" burgers. I'll grill those later too. So the tzakiziki and marinated red onions are to top those. Need some feta to go with. Actually this stuff is all stuff to eat this week and not tonight. Am I nuts or what? Tonight's dinner will be fish. I have a piece of hazelnut encrusted tilapia and I have a piece of pecan crusted tilapia for Rich courtesy of Wegmans. I'll make some tartar sauce to go with soon. We just bake 'em. I have 2 sweet potatoes baking in the oven now. Those are to go with the fi****hink I'll mash those up and top them with some chopped nuts (I'll have to see what I have), splenda, cinnamon and a dab of butter. We'll also have some green beans on the side. I'm also on load of laundry number 3. The sheets. Hope everyone is having a productive day. This is truly my first big one in a long time. Gotta embrace it while I got it. Kathy
