Favorite Healthy Picnic Type Foods

Rich and I are going to be doing our annual pilgrimage to see Shakepeare out of doors later this month and I'm trying to think of interesting healthy picnic type things to bring with us. Since we will be traveling several hours away... we won't be able to heat things up so we need chilled foods. Last year I think we took a wide wide variety of salad fixings including cold cut rollups to make chef's type salads. We make great deviled eggs, chicken salad, guacamole, salsa, etc but I'm looking for interesting fare. Kathy

How about Melon balls - you can even freeze them... We use honeydew and cantaloupe, make the little balls with the scooper and freeze them in a ziplock bag. They will typically thaw within a few hours, but also help keep your other foods cold... Wonder if you could do it with watermelon...

Grill up some drumsticks at home and take them with you. Other grilled meats can also be served chilled or room temperature: pork loin with some type of chutney, beef with some type of dressing - maybe an asian ginger soy dressing, or even salmon with some type of dill mustard. You can wrap the meat in lettuce leaves or have it straight from a container. Ina Garten, the Barefoot Contessa, likes to use those chinese takeout container boxes for picnicsalong with chopsticks. It makes things fun and interesting. For veggies, consider a cold green bean sesame salad (you should be able to find a recipe online), or a cold broccoli/cauliflower salad with a vinagrette. Can you tell that I watch waaay too much Food Network?
