Hi everyone, I'm always game to play around with recipies for protein balls.
Here's the latest creation:
Butterscotch protein balls
---------------------------------
1 Cup vanilla whey protein powder
1 Cup peanut butter ( I used creamy but crunchy would be even better)
1 pkg. SF butterscotch instant pudding mix
3 Tablespoons milk or liquid of choice ( adding more if needed teasp. at a time)
1/2 Cup Kashi Go Lean crunchy cereal
1/2 C nuts ( used sliced almonds)
Crumbs
-------------
1/4 Cup Fiber one cereal crushed finely
1/4 Cup Peanuts crushed finely
Add first 3 ingredients and drizzle milk and mix well
add cereal and nuts and mix well
form walnut size balls
Roll in the crushed cereal and nut crumbs
pack in tupperware like container and keep in fridge
(sprinkle the left over cereal/nut crumbs over the balls as you pack them)
* I consider 2 balls a serving
* the Kashi Go Lean cereal has 9 gr. protein and 8 gr fiber per cup
Fiber One cereal has about 18 gr fiber in 1/2 cup
( I pitched the box so can't be exact, sorry)
I really liked them. You could easily use the SF chocolate pudding to vary it.
#2 Recipie
---------------
5 Bean salad
1 can garbanzo beans drained
1 can black beans drained
1 can kidney beans drained
1 can green beans drained
1 can yellow wax beans drained
2 Tablespoons splenda
1/4 cup vinegar
1 clove garlic chopped
1/4 cup chopped mixed peppers ( I used green, red and yellow)
1 teaspoon parsley
2-3 Tablespoonfuls olive oil
Drain beans and retain some of the clear liquid
chop garlic fine and chop peppers coarsley
Mix garlic, peppers, oil and vinegar and splenda and parsley into the beans
Add salt and pepper to taste
* Use as much liquid as you like, I didn't measure exactly, approx. 2 Cups
Chill and store in fridge
Always better the next day when the flavors mingle overnight
* great source of protein
Enjoy, Mary
