What are you eating on Humpday?
Are you using boneless chicken breasts? I've been making one that my family LOVES and it's a great protein meal. I open the breasts out as flat as possible, stuff it with chopped ham and light swiss cheese, fold it over to close it and cover it with honey dijon mustard. I bake at 350 for an hour, sometimes more. It's sooo good and full of protein. I don't follow actual recipes, I make them up as I go, so sorry I don't have exact info! Sometimes I add zucchini or spinach to the stuffing. Mmmmm
Wow that sounds yummy but I am using chicken thighs, legs and wings. Gotta have the wings for my dad. I'm not sure about the veggies but I promised my boyfriend that the next time I cooked for him I'd make green fluff so we are having green fluff but I won't be eating any because it makes me dump so more for him and my parents. I can't serve broccoli because my dad is having some blood work done and he can't have broccoli until he has the test done. I might do peas and carrots.
