Be a Bean Keeper
Beans are an inexpensive and delicious food that you will want to keep stocked in your pantry because of their numerous health and longevity benefits. Here are some of the advantages of a bean-rich diet.
They are rich in protein and fiber! Protein gives us energy, is necessary to build healthy hair and nails, it's an important building block of bones, muscles, cartilage, skin and blood, and your body also uses protein to make hormones. Fiber is necessary to keep us regular, plus it helps to lower cholesterol, and prevent certain types of cancer.Beans pack a powerful and tasty punch at a low price—better still, beans and legumes can be stored for a relatively long period of time. They will keep their quality for 6–12 months, perhaps even longer, if stored correctly. It is perfectly fine to store them in the unopened plastic bag that they come in. Also, you can transfer the beans to an airtight glass or metal container and store in a cool, dry place (but not the refrigerator.) Or buya variety of beans in the can and store them in your pantry to always have on hand for a variety of recipes.
1/2 cup Light Red Kidney Beans has...
120 calories (not bad considering it's all healthy)
8 g protein
7g fiber
1g fat (0g of saturated & trans fats).
21g (good) carbs.
And only 1g sugar!
Now that's something to toot about! (sorry couldn't resist!).
Here's what I've been creating with BEANS lately.......... I don't measure things so you'll have to fix it to your personal taste.
2 or 3 cans of beans -15oz. (any variety...I've used kidney, black, navy, garbanzo, pinto, black-eyed peas, etc...), Draine & rinse beans
chopped red onion (or green onion..whatever you have on hand)
1 can blacked olives, drained & chopped
about 1/4 cup extra virgin olive oil
juice & zest from one lemon (or use lemon juice if you don't have fresh on hand)
chopped fresh parsley, basil, cilantro (or use dried if you don't have fresh available) - use as much as you like to taste.
3 or 4 cloves of garlic finely chopped
Mix everything together, add a little salt & pepper to taste and chill in fridge. I like to do it the night before and let all the flavors meld together overnight and get nice and cold. I make a big batch and munch on it anytime I've got hunger cravings. It tastes great and it feels like I'm cheating but I'm not! It's so healthy and a much better choice than cookies or pretzels!

Oh yeah I am a huge bean fan...
I got this recipe from a support group pot luck
2 lbs of ground chicken
1/2 can of light cream of chicken soup
1/2 pkg saltine crackers crushed
Season with garlic pepper and salt
Mix all together
Make into meat balls
With the rest of the soup add to botton of baking dish and add meat ball on tip of it
Bake 350 for 35 mins
Makes nice moist meat balls I eat 2 of them Yummy

I forgot to mention adding about 2 to 3 tablespoons of red wine vinegar!

And lately money has been extremely tight around here and I'm trying to find ways to stretch the budget and not skip out on eating healthy and right.
