Crunchy low carb snack I found....

Ok, I've been suffering through a summer without salsa..... Seems there's no real "salsa carrying implement" that is crunchy, protein packed, and low carb. I've read on bariatriceating.com about folks trying cheese chips, and recently found a recipe for them, so I gave it a try. Here's the "skinny", pardon the pun. Using a hard cheese like Asiago, Parmesean, or Romano - preferably pre-shredded (found Parmesean at Sam's club) - you line a baking tin with wax paper and spread 1 Tbl of cheese shreds in a lacy layer so you can see the paper below. Season with pepper, salt, spices to taste, and bake at 350 dg for 5 minutes. If you open your oven and find that they are still white-ish yellow, put another 2 minutes on the timer. Take them out when they are starting to turn brownish on the perifery - or longer if you like them crispier. Each 1 Tbl chip is about 3-4" round, and has 25 calories, 2g of Fat, 2g of protein and ZERO grams of Carb!! I had 3 of them and a couple of spoonfuls of homemade salsa for a protein filled snack tonight totaling 75 calories, 6g of protein and 6g of fat. Beats those tortilla chips hands down!

That sounds great! I have actually had some tortilla chips with salsa. It's great to eat 5 chips and be fine with it. I think I would prefer the cheese crisp way though!
