food idea - Low Carb General Tso's Chicken
I have been cooking a lot since surgery since I am kind of a control freak about what I put in my body. When I try something good, I will post for the group. I would love to hear what others are making!
Low-Carb General Tso's Chicken
1 lb boneless chicken breast
1 package General Tso's seasoning (got it at the store in the 'ethnic' aisle, brand is Sun-bird)
2 tbsp olive oil
1/4c Splenda (instead of sugar)
3 tbsp soy sauce (low sodium variety)
3/4c water
1/2c fine ground almonds (recipe calls for flour, I replaced with Fisher Chef's Naturals Fine Ground Almonds which are the consistency of flour)
Cut chicken into small pieces. Add to sealable plastic bag with ground almonds, shake to coat evenly. Combine water, seasoning mix, splenda and soy sauce, wisk and set to the side. Heat oil in pan, add chicken and coo****il no longer pink inside. Add seasoning/water mixture and bring to a boil. (I added a little more red pepper flake to spice it up a bit, and some garlic for the heck of it) Reduce heat and simmer until desired consistency.

Calories: 227
Fat: 12g (a little high, but the carbs are so low...)
Carbs: 5g
Protein: 24g
It's not exactly the same as take-out, but it has pretty good flavor. I have a hang-up about all the fat, calories and carbs in take-out Chinese so now I won't touch it. This was a tasty substitute, not perfect, but good and decent nutrition. Enjoy!
I never thought of almonds as a breadcrumb/breading substitute. Good idea! I made soy meat (called veat gourmet bites- www.veat.com, you can find it at whole foods or other healthfood places) with the Iron Chef - General Tso's Sauce (www.http://www.ironq.com/iron_chef_general_tso_s_sauce.html). Cooked the soy meat in olive oild, threw in some lite soy sauce and a packet of splenda to add that sweet flavor. Not bad at all...
