Anyone have any recipes to share? Here's a few that I have been doing that I really enjoy. I have mostly stolen these off the other boards, but I thought I would share and use them to start a thread here to hijack some more ideas Protein Pancakes 1/2 c. cottage cheese (if there is a lot of liquid, it may help to strain it a bit) 1 egg 2 tbsp whole wheat flour (or regular flour, but WW adds fiber and protein) Blend in magic bullet or blender. Cook in skillet. I top with about a tbsp of Smuckers SF pancake syrup and a little I can't Believe its Not Butter Spray. I make four small pancakes and eat two. Then I have breakfast for 2 days. Yum. (for whole recipe - 212 calories, 6g fat, 18g carbs, 22g prot) Crustless Pizza 1 lb ground turkey (I use regular, the extra lean is too dry and doesn't taste as good in this recipe) 2 whipped eggs 10 crushed whole wheat crackers Mix these together with your choice of spices (garlic, oregano, basil, etc) Press into a non-stick pan (to form about a 1/4 to 1/2" 'crust') and bake at 350 for 10-15 minutes I take it out and blot the grease off the top with a paper towel Top with choice of pizza or spaghetti sauce. I like Hunts in the can. Then top with LF grated parmassan and LF shredded mozzarella Bake another 10-15 minutes until cheese bubbles. (I don't know the exact calorie count. I cut a piece that looks like it would fit in a 1/2c and I use Fitday.com to get the counts for 1/4c ground turkey, 1/8c spagetti sauce, and 1/8c cheese) My favorite snack. It doesn't have a name 1/2c Fage 0% Greek Yogurt (you can find at Whole Foods) 1 tsp raw honey 5 cherries pitted and cut in quarters or 8 blueberries cut in half Stir. ITS SO GOOD. But be careful of honey and dumping. 1 tsp doesn't affect me but no promises for others. (I also actually use a little less than 1/2c of the yogurt so the whole thing will fit in a 1/2c, sometimes I can't fini****) (1/2c Fage 0% = 60 cal, 0g fat, 5g carb, 10g prot, honey = 32 cal, 9g carb 5 cherries = 24 cal, 6g carb) Can't wait to see what others are making!

I made a great pizza this weekend myself: I used one whole wheat tortilla spray lightly wi/ olive oil flavored cooking spray top wi/ chopped red onions, fresh garlic, sliced roma tomatos, chunks of roasted chicken, fresh basil and low fat mozzerella cheese. Put under the broiler for about 5 minutes OR put on a hot grill for about 5 minutes. My roomie, who pretty much turns up his nose at anything healthy, ate one himself and my leftovers ( I can only eat about 1/3 of one). Here's another one I whipped up this weekend: In a skillet heat olive oil flavored cooking spray and chopped green peppers and onions. Take about 2 1/2 - 3 cups of cooked chicken, cut into small pieces (I had some leftover that I had made in the crock-pot) and add to skillet. Coo****il chicken warms up. Add 1 package of reduced sodium taco seasoning and water as directed. Let simmer for approx. 15 - 20 minutes. In a casserole dish smash a thin layer of baked Tostito Scoops Top chips with one can of FF refried beans Top beans wi/ 2% milk Mexican cheese blend Top cheese with chicken mixture Top chicken wi/ another light layer of cheese Bake at 325 until cheese is bubbly. Serve wi/ chopped tomatos, green onions, lettuce, LF sourcream, jalepenos, etc. The last one was so good and filled wi/ protein (beans, chicken, cheese) that I was kind of mad that I could only stomach about 4-5 bites. Very filling and satisfying as well.
