Topic: 1 year anniversary!
Well yesterday was my 1 year mark! I still remember thinking it would never come, but it sure snuck up on me. Although I didn't get to the goal I had set for myself, which was to be under 200 lbs. I'm still proud of the progress i've made thus far. I'm at 208 lbs, which puts my total loss to 214lbs. That's nothing to complain about!! So much has changed since one year ago, it's weird to be out and public and for someone to take a long look at me and this time it's not because i'm soooo huge!!! I'm enjoying my life now and am actually excited about my future. Some of the wow moments that have happened is: to finally be able to cross my legs, I dont remember ever being able to do that and now it's a habit that I can't stop!! I can buy clothes at any store I go into-I must have been in jr high when I was this size! I have a face now, and to think all those years I thought my face shape was roundish square but in actuality it is oval! I am getting better with my self confidence, it is a hard adjustment when you were always shy and avoiding people. I'm still working on not being afraid and shy but it is getting better. I'm sure there are more but those are the ones that stick out in my mind the most! Thanks to all of you for helping me make it through this first year without feeling alone!!! Hi ya'll! Happy Hump Day. I hadn't posted a new post in here for a while and I felt kinda bad for letting my anniversary come and go. But I didn't want to do yet another "My life has changed so much..." post. You guys have all said it better than I ever could. So, this post is about recipes. Post your one, favorite, go-to recipe that is healthy, low-carb, and (hopefully) easy to make. Cause I know I'm sure not the best cook in the world! Mine is veggie-Tofu lasagna 1 zuchini 1 yellow summer squash 1 med yellow onion 1 box fresh mushrooms 1 pkg. firm tofu 8oz lite ricotta 2 cups lowfat mozzarella 1 jar organic marinara sauce from trader joe's (its low sugar, but any will do) Chop and sautee onion and mushroom in a tiny bit of olive oil Chop all veggies Mix together sauce, ricotta, 1 cup mozzarella Slice tofu as thin as you can, anout the thickness of a nilla wafer Layer tofu, sauce, veggies, onion until you are out of tofu. Then sprinkle the remaining mozzarella on top. Bake at 350 for an hour. Any less and the veggies will still be crunchy. Chocolate chip cookies use your favorite recipe with these substitutions: - sub all White sugar with splenda (not the brown, sorry but that's what makes the cookie!) - sub shortening with applesauce (keep the butter) - sub 1/2 flour with ground almond flour (much lower carb) - use organic or dark chocolate chips. If you can find them, they do make SF chips! These will fool your family guaranteed! And you can even have one or two!

Good morning... B-I used my new coffee maker (keurig) and had a protein latte. s- small sf cookie L- will be a slice of deli turkey and ham with a slice of swiss cheese d- chicken noodle soup s-protein drink cookies and cream
