Hi ya'll! Happy Hump Day. I hadn't posted a new post in here for a while and I felt kinda bad for letting my anniversary come and go. But I didn't want to do yet another "My life has changed so much..." post. You guys have all said it better than I ever could. So, this post is about recipes. Post your one, favorite, go-to recipe that is healthy, low-carb, and (hopefully) easy to make. Cause I know I'm sure not the best cook in the world! Mine is veggie-Tofu lasagna 1 zuchini 1 yellow summer squash 1 med yellow onion 1 box fresh mushrooms 1 pkg. firm tofu 8oz lite ricotta 2 cups lowfat mozzarella 1 jar organic marinara sauce from trader joe's (its low sugar, but any will do) Chop and sautee onion and mushroom in a tiny bit of olive oil Chop all veggies Mix together sauce, ricotta, 1 cup mozzarella Slice tofu as thin as you can, anout the thickness of a nilla wafer Layer tofu, sauce, veggies, onion until you are out of tofu. Then sprinkle the remaining mozzarella on top. Bake at 350 for an hour. Any less and the veggies will still be crunchy. Chocolate chip cookies use your favorite recipe with these substitutions: - sub all White sugar with splenda (not the brown, sorry but that's what makes the cookie!) - sub shortening with applesauce (keep the butter) - sub 1/2 flour with ground almond flour (much lower carb) - use organic or dark chocolate chips. If you can find them, they do make SF chips! These will fool your family guaranteed! And you can even have one or two!

Yummmm..and no we can't say it better than you so share something that is major chnage so we can cry and smile and all the goofy things we doo when we get emotional. Thanks for the recipes....do you have counts for these? I will send a recipe after I finish dinner...my hubby got invited to Clemson game....so I have to hurry to get it done. Joan M

I only know that the whole lasagna recipe has 96g of protein. But I don't really count anything besides protein. There might be an online recipe converter that can turn this into nutritional info per serving.

Jenn your more of a cook than I am......looks like to much work for me. Does the tofu taste like tofu in the lasagna? Not sure if my kids would eat it if it tastes too healthy! I will have to try the cookie recipe! I have been MIA on here a lot these days too, life is so busy now, and at night I hate to sit in front of the computer I want to be moving. Happy belated one year! You have done awesome! When's your next race?

Congrats, jenn, on your anniversary!!! Now as far as recipes go, I am recipe-ally challenged. My directions are more like --- 1) Walk 4 paces 2) Turn right 3) Open door 4) Insert paper plate 5) Close door 6) Turn microwave on 60 seconds and voila, my "fill-in-the-blank" is done. I admire all you cookers (just not enough to actually want to experiment myself!!) Enjoy the day! Sue

Congrat's on your anniversary. I have many favorite recipes but here is one of the newest ones. Not everyone might like this version but I was pleasantly surprised and thought is was quite good and nutritious too. Black Bean Brownies Fat: 3.4 g Carbohydrates: 8.9g 0 sugar 2.5g fiber Protein: 4.1g Calories: 79.2 Guiltless high-fiber, high-protein brownies. 15oz can black beans (drained & rinsed well) 4 large eggs 1/2 cup granulated Splenda 3 tbsp cocoa powder 2 tbsp strong coffee (or 1 tbsp instant coffee dissolved in 1 tbsp ho****er) 1 tsp baking powder 2 tbsp canola or olive oil 1 tsp vanilla Preheat oven to 350*F. Prepare an 8x8 baking pan by spraying it with cooking spray. Mix all ingredients in a food processor or blender. Add the beans last and make sure you blend VERY well. Bake for 30 minutes, or until toothpick comes out clean. Allow to cool before slicing. Brownies are approx. 2"x2" in size. Number of Servings: 16 Recipe submitted by SparkPeople user GENEVIVA.
