White Chicken Chili
Someone told me to try the McCormick's spice packet and I did. SO AMAZING! Here is my recipe. I can eat almost a cup of this soup.

White Chicken Chili
1 large sweet yellow onion, chopped
2T extra virgin olive oil
Garlic salt to taste
1 rotisserie chicken (or 1 pound boneless skinless chicken breasts, diced and cooked)
2 cans cannelini beans (also called great northern beans)
2 cans of water
1 pkt. McCormicks white chicken chili mix
½ cup lite sour cream
Put oil in a large saucepan and heat on High. Add onions and saute until translucent. Sprinkle garlic salt onto onions to taste. Shread chicken and put into saucepan. Stir. Stir in both cans of beans and both cans of water. Turn heat down to Med. and add packet of mix. Stir. When chili is bubbling around the outside, add sour cream and stir. You can add more sour cream at this time if you want. Simmer on medium for about 10 minutes.
I like to add a dollop of sour cream and some chunks of avocado on each individual bowl.
You can also add in a can of corn, or a can of diced tomatoes for a different kind of soup.
