Chicken Breast with Avocado Chevrotina
4 boneless, skinless chicken breasts
4 slices bacon
salt, pepper
1 avocados
1 Chevrotina Round
1 Tbsp butter
Sauce
2 cups chicken stock
1/2 cup cream
2 Tbsp butter
1 Tbsp lemon juice
2 egg yolks
salt, pepper
Flatten chicken breast slightly with meat mallet. Season with salt and pepper. Halve avocado, remove seed, and peel away skin. Slice avocado halves lengthways to produce four quarters. Sprinkle with lemon juice.
Place a piece of avocado in the centre of each flattened chicken breast. Cut a wedge of camembert and place in centre of avocado. Fold chicken breast over to enclose cheese and avocado.
Take a strip of bacon and wrap around chicken breast. Secure with two toothpicks. Melt some butter in a pan, Seal chicken parcel on all sides then place on baking tray in preheated oven (180C or 375F) for approximately 30 minutes.
Spoon over sauce and serve.
*Sauce:
Place chicken stock, lemon juice, cream and spring onions in a saucepan. Bring to the boil and simmer 3 minutes.
Mix in egg yolks, stirring rapidly, reheat without boiling. Remove from heat and whisk in butter.
Season and use immediately.
