What are we eating today?
So how is everyone doing today? So far so good...
B - 1/2 c. 1% cottage cheese
1/2 c. SF apple sauce
L - small salad with 1 oz low fat ham and 1 oz. feta
Just 2 Good italian dressing 1 Tbsp. (or as I call it NOT 2 good)
1/2 lg. Detour bar (white chocolate & peanut butter) This is new
- pretty good.
Snack - planning 1 clementine and string cheese
Dinner - not sure yet. Meatloaf I think.

Lunch-
1 serving Toll-House Crackers (carb issues...wasn't home and was hungry!)
Snack(s)-
1 serving animal crackers (damn the carbs!)
(back at home...)
3 Twist String Cheeses
1 oz sliced ham
Dinner-
Ricotta, parm, mozzarella & egg, baked in small dish, with smidge sauce (lasagna without the lasagna! )
Drinks-
Lots of coffee/espresso & crystal light....

I've had:
B: 1 cup sf applesauce with cinnamon and splenda
2 TBS raisens
L: 4 low fat chicken chunks (home made)
3 tator tots
Chicken chunks: (this make enough for all 5 of us but 2 of my kids and myself don't eat much)
3 chicken breasts (boneless no skin) cut into chunks
1 cup low fat butter milk
2 tsp mustard ( or more to taste)
low carb bread crumbs
spray a cooking sheet with cooking spray
mix butter milk and mustard togeather in a bowl dip chicken in mixture and then into bread crumbs. bake 15-20 min at 400 degrees.
Snack: 6 bagel crisps
Supper: 1/2 ham and cheese calzone (home made)

Calzone:
1 10 oz pkg refrigrated pizza dough. (for 1 crust) ( I wonder if a low carb bread dough would work of this?)
1/4 cup coarse-grain mustard
6 oz sliced Swiss or provolone cheese
8 oz cooked ham, cubed
1/2 tsp caraway seeds
preheat oven to 400 degrees. line a baking sheet with foil; lightly grease foil. unroll pizza dough. on a lightly floured surface, roll or pat dough into a 15x10 in. rectangle. cut dough in half crosswise and length wise to make 4 rectangles. spread mustard over rectangles. divide half of the cheese among rectangles, placing cheese on half of each rectangle and cutting or tearing to fit as necessary. top with ham and sprinkle with caraway seeds. top with remaining cheese. brush edges with water. for each calzone, fold dough over filling to opposite edge streaching slightly of necessary. seal edges with tines of fork.
place calzones on the prepared baking sheet. ***** tops to allow steam to escape. bake in preheated oven about 15 min. or until golden.
let stand for 5 min. before serving.
i've never made the calzone before, but I will let you know how it tastes..
