I have a great new one for you too (from Giada).... simple, but super tasty side dish:
I was out of Prosciutto and used Bacon and it came out great. I also left out the salad and made it like a bean side di**** was delish! hope you enjoy.
Cannellini Beans with Herbs and Prosciutto
3 tablespoons olive oil
1 tablespoon minced garlic
1 tablespoon chopped fresh sage leaves
1 teaspoon chopped fresh thyme leaves
1 (14 1/2-ounce) can diced tomatoes with juices
2 (15-ounce) cans cannellini beans, rinsed, drained
2 ounces prosciutto, coarsely chopped
Salt and freshly ground black pepper
3 cups arugula or mixed baby greens
Heat the oil in a heavy large skillet over medium heat. Add the garlic and saute until fragrant, about 30 seconds. Stir in the sage and thyme. Add the tomatoes. Increase the heat to medium-high and simmer for 2 minutes. Add the beans. Simmer until the tomatoes are tender and the juices evaporate by half, about 5 minutes. Turn off heat and stir in the prosciutto, being careful not to overcook the prosciutto. Season the beans, to taste, with salt and pepper.
Arrange the arugula or mixed baby greens over a platter. Spoon the beans over the greens and serve.

Hi All,
Not the best of walking for me this week.....these darn chemo treatments are getting in my way!!!. I'll sure be glad when it's over. Although this week I have felt a little better because I've been getting Neupogen injections every day to help with the blood counts.
I only had 15.25 miles on my pedometer this week.
My good news is I'm going to celebrate Thanksgiving in Hawaii with my kids Kathleen and Austin. My oncologist has given me the OK to travel as long as I'm careful to stay away from germs and sick poeple. I leave on the 20th. I'm really looking forward to the trip.....but hoping I don't scare them with my appearance.....I look very different than I did in August when they left for school. They of course have seen me with no hair....but now I have no eyebrows or eyelashes!!!! (If I still had all my weight....I'd make an excellent Uncle Fester tomorrow night!!! hahaha)
In the end this expierence will be a distant memory as I go on to lead a VERY healthy long life!!!!!

I have another option...number one with a twist...Determine a winner for my small prize for the October walking but keep walking until we get across America, and then for each month until we reach our goal...I will volunteer to do a small prize for the one with the most miles logged in November...

I made it for my family last weekend. They loved it. It was scrumptious. Sweet potato fries are also yummy!

I'm glad I have never been a shopper. I'm not sure if it is a good thing that my wife is the dedicated shopper or not? The good thing about resolutions is that you can always start over if you need to.
