Easter Dinner
Hi Maria. Since it will just be my husband and me, we've decided to have huge shrimp and scallops! It seemed silly to buy a ham for just the two of us especially since I can't eat that much. We would never eat it all. I tolerate shrimp very well and will give scallops a try. I'm going to saute both in garlic and a little olive oil and add a little fresh basil. I'll also cook fresh asparagus for a side dish and maybe bake a couple of sweet potatoes. For dessert, I plan on slicing fresh strawberries and topping them with sugar free Cool Whip. I don't think I'll feel deprived in the least with that menu.
Of course, this year, my Easter basket will not be filled with chocolate or those luscious Cadbury carmel eggs (drooling!). But I believe I do have a pretty necklace coming my way instead. Not a bad trade! As my husband says, the chocolate bunnies and eggs will be gone by the next week, but jewlery lasts forever! (He is so well trained! )

The shrimp Stephanie mentioned sounds good. I can tolerate them pretty well, also. I think I'll steam some with Old Bay seasoning (It's a MD favorite). Since I lost my mother 2 years ago, I try to cook for my stepfather 1 sunday out of the month. My youngest brother and my oldest son live with him, too. My brother can cook a little, but he never prepares any vegetables, only the meat. And it's a shame, I haven't taught my son to cook much either. So I'll be cooking for 2 houses. I plan to cook turkey, ham, candied sweet potatoes (I may just bake them), collards or kales, potatoe salad, and cake. I'll only be able to eat the turkey, greens, and a bit of the sweet potatoes.

Im cooking the ham--- everyone loves my ham haha. I prob wont eat any.
I e-mailed my brother in law to see what else they are planning so I can plan ahead. Im hoping they do some mashed potatoes.... otherwise I'll probably pack my own dinner and bring it with me.
