MEXICAN SPINACH & HAMBURGER CASSEROLE

1 pound ground lean hamburger or turkey breast 1/2 medium onion, chopped, 2 ounces 10 ounce package frozen chopped spinach, thawed and well-drained 1 can black beans 8 ounce light cream cheese, softened 1/3 cup light sour cream 2 tsp. chili powder 1 tsp. cumin 10 ounce can Ro-tel tomatoes, drained (diced tomatoes with green chiles) 1/4 cup canned sliced pickled jalapeños 1 Tblsp. chopped cilantro Salt and pepper, to taste Brown the turkey burger and onion. Put in a greased 2 1/2-quart casserole along with all remaining ingredients. Mix well and bake at 350º for about 40 minutes or until bubbly and browned on top. Can be frozen.

Ohhhhhh this sounds yummy......this sounds like a great casserole to make on a cold winters night....btw.....heard you got some snow out there...must have been nice.....weird but nice.... Jannine

Im making this for dinner tomorrow Yup, and the snow was a little weird LOL.. it's normal to snow up in the mountains, but not down here in the valley.

Yummy is all I can say, anything with cram cheese in it cannot be that bad. I am going to make make this saturday for dinner but I am going to cut the receipe in half. thanks for posting

Im the same way-- any recipe with cream cheese is good with me! hahaha. Im making it for dinner tonight, I'll let you know how it goes.
