Almost Rice Pudding
By request, here is the recipe for my fake rice pudding. It's more like a custard, but it is really yummy and the stats are great.
1 1/2 cups fat-free cottage cheese
1 cup Hood Calorie Countdown fat free dairy beverage
1/2 cup fat free half and half
1/2 cup Splenda granular
3/4 cup egg substitute
1 T ground cinnamon
Combine all ingredients except cinnamon in blender until almost smooth.
Pour into 8 6-oz custard cups or 1 8-inch souffle dish.
Place custard cups or souffle dish inside another dish so tha****er can be poured up 1 inch around the dish holding the custard.
Bake in 350 degree oven for 35 minutes until knife inserted in center comes out clean (will take a lot longer to bake if make in one dish...just keep checking it every 15 minutes).
Sprinkle top of custard with cinnamon as soon as you remove from the oven.
Number of Servings: 8
Per serving: 65.4 calories, 0 g fat, 7.4 g carbs, 9.1 g protein.
You can use low-fat cottage cheese, skim milk and regular eggs if you prefer, but the stats will change.
I like it cold, but I really like to eat it hot.
