Recipe: White Chicken Chili
I made this last night in the crock-pot, it turned out YUMMY!!! It was a creation of mine after looking at tons of crock-pot recipes yesterday, the ingrediants listed is an estimation of what I put it-- but I find with this kind of stuff you can never go wrong.

Place the following in your crock-pot, mix and cook low for 8-10 hours.
3 Boneless skinless chicken breasts (Diced into bite size cubes)
1/2 a medium onion (diced)
1 summer/yellow squash (cubed)
2 Cans White beans (Great Northern Beans etc)
1/2 can of whole corn (If you like corn, add the whole can if you want)
1 small can of mild green chillies
1 can of diced tomatoes (Drained)
1/2 tsp of fresh garlic (I buy the miced garlic in the jar)
1 & 1/2 can of fat free chicken broth
-- And the following spices, I do this to taste, but I will approximate the amounts (Add more or less for what you like):
1 tsp black pepper
1 tsp salt
1/2 tsp cumin
1/2 tsp oregano
1/4 tsp caiyene pepper
1 TBP Chili powder.
Once cooked it didn't require any thickening, just serve with some shredded cheese on top. Its great on its own but you could also serve with fresh onion, tomato, cheese, cilantro, crumbled tortilla chips, olives, sour cream, cilantro etc make it your own!
Ahh Mimi, that does make things hard.
My SIL that had surgery, her husband eats No vegetables.. and I mean NONE, seriously he doesnt even eat lettuce. He eats meat, bread & potatoes.... thats it-- ok so one vegetable. He drives me crazy... and it works against her, she doesnt make the effort to make veggies cause he wont touch them, and then she eats crappy too.. its sad..
My other BIL is like that too though, he eats everything in little seperate piles, he won't mix food.
