WDYET??? *** Thursday ***
Ok, I know this is WAY bright and early, but I know what Im eating today--- the joy's of packing lunch for work, and we decided on dinner already. I figured I might as well start the thread and everyone can add throughout the day.
On my lunch break we are going to visit EJ's older sister who had Lap RNY yesterday.
So after yesterday's thread, I feel like a pig eating 1000-1200 calories a day... I can't figure out how some of you eat 600-800 a day. Anyway today will be a good day for me.

Breakfast: Packet of Quaker Peaches & Cream Oatmeal, with a little cup of splenda swetended lite peaches. (Oatmeal 130 calories, Peaches 33 calories)
Snack: Yoplait Light Yogurt (100 calories)
Lunch: 4-6oz Homemade Pork Stew (239 calories) + 4 Triscuits (68 calories)
Snack: 1 Gala Apple & a Pepperjack cheese stick (Apple= 72 Calories, Cheese= 100 Calories)
Dinner: Salad (1/2 C Lettuce, Red Onion, Diced Tomato, 3oz Albacore Tuna & Kens Lite Sweet Vidalia Onion Dressing= 206 Calories)
That gives me a total of Approx 900 calories for the day.

Now evaluation. I didn't NEED to add the extra peaches with breakfast, didn't need the triscuits, and the pepperjack cheese stick is not low fat, so could have saved maybe 20-30 calories eating a low fat cheese instead. I also could use a lower calorie dressing, maybe a vinegarette instead of a creamy lite dressing. So with those changes I could have shed 100 calories from my day. I don't know if I need to shed those calories though. I just feel so fat right now, maybe it's cause Im bloated from Aunt Flo *shrugs*

its moist because of cooking the chicken so long and then baking it in the creamy mixture.
this is a dish we've enjoyed for years. my Aunt has made for family functions so many times and no one knew the name of it so it developed into "Val's" Chicken. Val is my aunt ;) The chicken is boiled for an hour til it falls off the bone then stays moist because its cooked in cream of mushroom soup and sour cream. good stuff!
2 large chicken breasts, with bone, skin removed
2 cans campbell's cream of mushroom soup (option - low fat cream of mushroom)
16oz container sour cream (option - low fat sour cream)
2 cups bread crumbs (option - carb control or whole wheat bread crumbs)
1 stick butter (option - 1/3 - 1/2 cup smart balance butter)
preheat oven to 350.
boil water on the stove and add chicken breasts. cover and cook for 1 hour. let the chicken cool to touch on a plate. Once cool enough, shred the chicken into small pieces (i just usually rub it together between my fingers and it shreds).
Add 2 cans cream of mushroom and 16oz container sour cream, mix well and spoon into a 9 x 13 pan.
melt butter in bowl, add bread crumbs and then put on top of chicken mixture. bake for 35 minutes
I calculated the nutritionals using the recipe calculator at www.sparkpeople.com (where I track my food intake and exercise).
I used the following assumptions:
6 servings
1 lb of chicken breasts used in recipe
2 cans 98% fat free cream of mushroom soup
Low-fat sour cream
8 slices 40 calorie bread used for breadcrumbs
1/2 c Smart Balance buttery spread used instead of the butter
Per serving: 404 calories, 24.9 g fat, 10.4 g saturated fat, 828.7 mg sodium, 25.4 g carbs, 3.8 g dietary fiber, 3.1 g sugar, 21.2 g protein.
If you use fat free sour cream in place of reduced fat and use the Promise fat free margarine the values per serving are:
272.8 calories, 4.3 g fat, 1.7 g saturated fat, 857 mg sodium, 34.8 g carbs, 3.8 g dietary fiber, 9.3 g sugar, 22.8 g protein.
I wasn't sure how many servings so I just estimated in order to give people an idea of the calories and protein. Thanks for letting me know if serves a lot more than I had estimated!
It would be easy to multiple the info I listed above by 6 and then divide by the number of servings each person gets from the recipe.
At 8 servings the first option has 303 calories and 16 grams of protein.
The important things to me in any recipe is the protein calorie-to-total calorie ratio and the amout of fat.
In the first option is 21% of the calories come from protein and in the other a little over 33% of the calories come from protein.
The first option also has a lot of fat. For those who are sensitive, it could cause dumping.
If I make this di****hink I will use more chicken, which would up the protein calorie-to-total calorie ratio to the level I strive for (50% minimum).
Of course, the fact that I am so anal about this is probably why I struggle to eat 700 calories a day!
