Mini Quiche Recipe

These came out so good and I love the fact that you can pop them in your mouth! I actually had 4 for breakfast at room temp and they were good that way too! I made a lot of changes to the recipe and actually measured amounts when I put it in the pan so I can remember for the next time I make them. you could use any quiche recipe you think of and use the same directions. Next time I think I'll layer the quiche with a little chicken, salsa, egg mixture and taco cheese! I found the mini cup pan at Target for $6.99 theres 24 mini cups on the tray heres the original recipe 3/4 cup crushed saltine crackers 1/2 stick (4T) butter 2/3 c. onion, diced 1 lb spinach leaves, steamed and squeezed to get most moisture out salt and pepper to season 1/2 lb. bacon 2/3 c. swiss cheese, shredded 1/2 c. cheddar cheese, shredded 4 eggs 1 cup heavy cream pinch of ground nutmeg 1/4 tsp salt 1/8 tsp pepper directions for this quiche are the same as below except this is for a pie so the crust of crackers and butter would be put into a pie shell pan. --------------------------------------------------------------------------------------------------- 3/4 c. oyster crackers, crushed 2 T. smart balance butter 1 T. minced onion 6.5oz spinach (weighed it out then took the liquid out of it) 3 slices ready to eat bacon, cut into small pieces (you could use regular bacon or turkey bacon, but that makes me dump so I stick to the regular stuff) salt and pepper to taste 1/4 + 2T shredded swiss cheese (couldnt find reduced fat already shredded, next time I'll shred on my own) 1 T shredded reduced fat cheddar cheese 2 eggs 1/2 c. smart milk fat free half and half pinch of nutmeg, salt and pepper Preheat oven to 350 and spray each cup on pan with cooking spray. Crush the crackers and add melted butter, stir to combine. Put 1/2 T. of cracker mixture in each cup. Take the bottom of a shot glass and push the cracker mixture down to make a little crust. In a pan, brown bacon pieces. Add onion and coo****il translucent. Add spinach, salt and pepper. Combine eggs, half and half, nutmeg, salt and pepper in a bowl, mix well. Place some of the spinach mixture in each cup on top of the crusts. Add egg mixture to the top of the spinach mixture (I used 1/4tsp) and it seemed to be enough for the mixture. Put some cheese mixture in each cup. The cups shouldnt be full because they'll spill over while cooking. Fill about 3/4 way (I put a cookie sheet on the next shelf just incase it spilled over). Bake 12-18 minutes depending on your oven. I baked them for 15 minutes and then put it on broil for 2 minutes so the cheese would brown. good stuff

Oh my gosh! I just made quiche for supper tonight! I used what I had though.. broccoli, ham and cheese. Ooh, they have spinach in them! Yum!!

glad you liked them Lu Lu you could make them with any combination veggies, meat and cheese! I'm going to try it all kinds of ways, broccoli, ham and cheese sounds delish!

has anyone used nutritiondata.com? I started 2 days ago and can't stop putting ingredients in to get nutrition facts! I just put the ingredients in for the quiche recipe - 24 servings and this is what I got 52 calories 2 gr. fat 1 gr saturated fat 20mg cholesterol 102 mg sodium 7gr carbs 0 fiber 0 sugar 3gr protein 16% vitamin A 4% vitamin c 3% calcium 5% iron just had 3 of them! I think I'll make the ham, broccoli and cheese ones this weekend for Sunday's football get together.
