Want to do a water challenge?
Hello friends, it has been a few days since I have posted. We left the day after Christmas and went to TN for 9 days and got to enjoy being with my son and 2 grandchildren - along with friends and family. I got so many nice comments on how good I was looking - it was almost embarrassing, but I loved all of them!!!!
Anyway - how about a water challenge? Since we all seem to be tempted to eat a few bad things - why don't we try this....everytime we want something to eat that isn't a scheduled meal - we have to promise to drink at least 8 oz. of water before we take a bite and then if we are still tempted - then if you have to - you have to!!!! I think we could all use more water and more exercise....but lets try the water challenge for a few days!
I am going to play Darlene and give you a recipe my daughter-in-law gave me and she served it while we were in TN. It is worth 5 Weigh****cher's points is all the nutrition value I have for it....
Taco Soup
1 pound ground beef
1 chopped up onion
Cook together and set aside once meat is browned.
In soup pot:
1 can drained pinto beans
1 can drained kidney beans
2 cans stewed tomatoes
1 can rotel
2 tomatoe cans of water
Add browned beef and onion and bring to a boil. Add 1 pkg taco seasoning mix and 1 pkg of low-fat Hidden Valley Ranch dressing.
Simmer for a couple of hours....(you can pour over taco chips for other family members if they would like and you can sprinkle some cheese on top) It is lots better the 2nd day!
Anyway - it sounds like it has lots of protein in it ---I am fixing it as I type along with Mama of 3's apple crisp!

maybe i should count the water challenge as a protein challenge most of last week I got no more than 50 grams in a day and the scale today proved it, only lost .4 of a pound...
I've made the soup you posted and its delicious! the only thing I did differently was use low sodium V-8 juice instead of 2 tomato cans of water.
by the way.. it freezes well too
