recipe- Beef Carnitas (mexican shredded beef)
I made this today and it came out exactly like the beef at a mexican restaurant that you would get in burritos, enchilladas, tostada, etc.. I had it with some avocado, little lime and salt on the beef and avocado.. mmmmmmmmmmmmm good stuff!
2 pound chuck roast
1 (4 ounce) can green chile peppers, chopped
2 tablespoons chili powder
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
2 cloves garlic, minced
salt to taste
rub the roast with chili powder, oregano and cumin, cover both sides with garlic and chili peppers and marinate chuck roast overnight.
Add 1/2 cup of beef broth to a slow cooker and cook roast on high for the day (I cooked it for 7 hours on high, shredded the beef when it was tender enough to do so and cooked another hour in the juices on low****pt half out and froze the other half in snack bags (3oz each bag).
