High Protein Sandwich/Wrap Ideas

Thought I might post some ideas for high protein fillings to eat in bread--- the recipes all use bread but you could use with low carb/whole wheat wraps, whole grain pita bread or on Wasa crackers etc......... ---------------------------------------------------------- Cottage Cheese and Salmon Sandwich Ingredients: 2 Tbsp nonfat cottage cheese (1.5 oz) 2 oz canned salmon, drained and bones removed 2 tsp light margarine or vegetable spread 2 thin slices multigrain bread Directions: In a small bowl, gently combine cottage cheese and salmon. Lightly spread bread with margarine; pile on cottage cheese and salmon; close with remaining bread. Serve. ------------------------------------------------ Curried Egg Sandwich Ingredients: 1/4 tsp curry powder, or to taste 1 Tbsp mayonnaise, fat free 1 large egg, hard boiled, peeled 2 thin slices multi grain bread Directions: In a small bowl, mash egg well. Add curry powder and mayonnaise and mix thoroughly. Spread on bread. Serve. ----------------------------------------------------- Chicken Salad with Pecans and Grapes Ingredients: 2 cup chopped, cooked, skinless chicken breast 1 1/2 cup seedless California grapes, rinsed and cut in half 1/4 cup diced celery 1 cup coarsely chopped toasted pecans (or roasted) 2 Tbsp chopped fresh basil 1/2 cup thinly sliced green onions 1 cup fat-free mayonnaise 1/4 tsp salt 1/4 tsp ground black pepper 1 Tbsp fresh lemon juice Directions: Combine all salad ingredients in a bowl and mix well. Serve Variations: For a gourmet sandwich or wrap, add to wholegrain bread, 1/2 pita pocket or large wholegrain tortilla. ----------------------------------------------- Reuben Triple S Ingredients: 8 3/4 oz canned sauerkraut, drained and rinsed 4 slices Swiss cheese (reduced fat ) 4 Tbsp Russian Dressing (2.5 oz) 3 1/2 oz thin slices corn beef 4 slices pumpernickel or rye bread (1 oz each) Directions: Spread dressing on bread and arrange on a plate. Top with beef and sauerkraut, then cheese; place on grill and coo****il cheese is melted and browned. Serve hot.
