cream of brocollie soup
this is from a cancer cook book but it is good for you and does have a decent amount of protien - I figure I can eat 1 cup of soup over an hour or so and it is sooooo hot here right now
CREAM OF BROCCOLI SOUP
2 stems broccoli (or several cups of frozen)
4 cups chicken broth
1 Tablespoon olive oil
1 Tablespoon butter
1/2 med onion, chopped
2 Tablespoon whole wheat pastry flour (reg flour works
as does cornstarch in a pinch)
2 cups milk (skim if counting cals)
4 oz mozzarella
1 teaspoon salt (can skip if using other than low salt
chicken broth)
1/2 teaspoon curry powder
OR 1/2 teaspoon nutmeg AND 1/2 teaspoon cumin
1. cook broccoli in chicken broth till tender (20 mins
on stove- OR 10 in microwave)
2 melt butter, add oil - saute onion for 5 mins till
transparent
3 add flour, stir till blended and then add milk -
cook till slightly thickened
4 remove from heat, stir in cheese and seasoning
5 mix with chicken and broccoli - blend in blender in
small batches or in pot with hand blender till smooth
6 may be reheated but do not boil
per 1 cup serving
