I found an AWESOME salmon recipe. Here it is. Citrus Salmon Parcels 4 Salmon Fillets, 6 oz each (I only used one that weighed half a pound for me and my hubby) 1 tbsp margerine (can use diet or lowfat) 2 tbsp orange juice concentrate 2 tsp lemon juice salt & pepper to taste, if you prefer 1 small onion, thinly sliced 2 carrots, thinly sliced 4 oz snow peas, strings removed and cut in half ( I used the peas from frozen stir fry veggies) 1) Place one fillet on each of four 12x16 inch sheets of alum foil 2) In small bowl whisk together butter, juices and seasonings. Pour over fillets. Arrange veggies on top. 3) Make a parcel pouch with the alum foil by folding the edges to meet and folding up to seal completely. 4) Can cook in 400 degree oven for 10 minutes on cookie sheet or medium high heat on the grill until fish flakes easily. Ours was about 15 minutes. Nutrition info per serving Calories 284 Fat 9g Carb 9g Fiber 2 g Protein 39g This is SO yummy and has become my favorite fish dish after my shrimp kabobs. Yummy!!!!!!! Believe it or not I haven't tried salmon since surgery--- I need to buy some next week when I go grocery shopping. Darlene
