Sweet Tooth?????
The healthy brownie recipe got me thinking maybe I'd post some yummy desserts... for anyone who has a sweet tooth but wants to find a much healthier outlet for it

Baked Custard
2 whole eggs or 1 whole egg and 1 egg white (**I use 3 whole eggs only if doubling**)
1 cup Low Fat milk or soymilk
3 Tbs bulk splenda
1 tsp vanilla
Nutmeg
Preheat oven to 350. Pour very ho****er into a square or rectangular baking dish large enough to hold 3 (1/2 cup) pyrex cups.
Blend all ingredients but nutmeg together very well. Pour into 3 pyrex cups. Sprinkle with nutmeg. Place in ho****er in pan. Bake 25 minutes for milk, 30 or more for soymilk. Eat warm or chilled.

Baked Chocolate Ricotta Dessert
1 c. part-skim ricotta
1/2 c. low fat cottage cheese
1 egg
7 packets of Splenda
1/2 Tbsp. cocoa powder
1 Tbsp. sugar free chocolate syrup (e.g. DaVinci)
Combine ingredients in a food processor or blender and mix until smooth. Pour into a small (approx. 2 cup size) oven-safe dish and bake at 400 for 15-20 min. Chill before serving.

Chocolate Raspberry Dessert
1 package fat-free cream cheese
1 cup fat-free half and half
1/3 cup no-sugar added strawberry preserves
1/3 cup Splenda
1 package (1.4 ounces) instant sugar-free chocolate pudding mix
1 cup no-sugar added whipped topping
¼ cup semi-sweet chocolate chips, melted
½ cup fresh raspberries
In a blender or mixer, combine cream cheese with half and half, Splenda and preserve.
Add pudding and mix well. Fold in whipped topping.
Pour into a 9-in. pie plate or individual serving dishes.
Drizzle with melted chocolate.
Cover and freeze for 8 hours or overnight.
Let stand at room temperature for 20 minutes before serving.
Garnish with raspberries.

Easy Chocolate Peanut Butter Cheesecake
8 ounces low fat cream cheese
1/2 C splenda
1/2 pint low fat/Fat free sour cream
1/2 t vanilla
1Tablespoon SF Chocolate syrup
2 eggs plus 2 egg yolks
1/3 Cup cocoa powder (unsweetened)
1/3 Cup sugar free low carb peanut butter (use natural)
1 Cup ground almonds
2 Tablespoons butter
Mix together ground almonds and butter and spread in the bottom of an 8 x 8 inch pan. Mix together the softened cream cheese, splenda, sour cream, and vanilla. When smooth, add chocolate syrup, eggs and egg yolks, cocoa powder and peanut butter and mix well. Bake at 350 for 25-30 minutes. Chill, top with whipped cream if desired .

Thank you!. My sister is getting married in July. The shower is in June, and I am making the desserts, and I will try these. We had a dress fitting this weekend, and 2 of the bridesmaids could not fit in their dresses! I am not the only one that needs healthier desserts! BTW, I fit in my dress! I am glad that we bought me 2 different sizes, so we can cut the smalller one down even further if needed.
