I know though can you believe it...almost Christmas time. Ive got all my shopping done just need to get two more things for my daughter then Im done. First time in my life ever that I have been this close to being done so soon!! Now the decorating time ARGGGG...but looks so nice when Im finished.

Romano Chicken Supreme
1 1/2 pounds of boneless chicken breasts
1/4 tsp salt
1 pound of fresh mushrooms--chopped
1 tblsp lemon juice
2 cloves of garlic--minced
1 tsp of dried basil
2 tblsp salt free butter
1/2 cup low sodium chicken broth
2 tblsp orange juice
1 to 1 1/2 cups of Italian breadcrumbs or soft breadcrumbs
1/3 cup of Romano cheese---grated
In a large non-stick skillet coated with olive oil spray, brown your chicken on both sides over medium heat. Transfer browned chicken to a spray coated baking dish; sprinkle with salt. In the same skillet you browned your chicken, saute your mushrooms, lemon juice, garlic, and basil in butter. Stir in the broth and orange juice;bring to a boil. Reduce heat and simmer, uncovered for approx. 3 minutes until heated throughly. Spoon mixture over the chicken; sprinkle with breadcrumbs and Romano cheese. Bake, uncovered at 400 for 25 minutes or until lightly brown.

I made this meal for my family is was pretty good and not to bad making...Im not sure nextime though if I'll add the orange juice, it was alittle strong, but it was still very good. Serve with a nice salad or green beens and your good to go!

Yeah, I FINALLY sent in an updated photo!!! The one that had been on my profile was one from when I was only 9 months post-o*****v 2004 Thanksgiving, to be exact! Four years has sure seen a big change in my life!!!
