Wednesday's Recipe....
Speggitti Salad
1 box of wheat speggitti-thin
1 jar of McCormicks suddenly salad mix
1 bottle of light sunny italian dressing
1 head of broccolli florettes
1 sliced cucumber
1 shredded carrot, (like strips)
1 can black olives (drained)
1-2 cut up tomatoes (chuncked)
a bunch of sliced pieces of pepperoni
***cubed cheese optional, if used Ide add that right before serving otherwise it seems to get alittle mushy.
cook your speggitti till almost done (aladenti), then rinse with cold water to cool. Add all your chopped up vegetables, salad dressing and salad mix...mix up good. Last add the pepperoni and mix again...refridgerate so it can get cold and marinate, every so often give it a good stir to mix the juices. Thats it, and its a easy recipe also a hit at summer gatherings...it makes alot and not bad for you!

Oh and whats also good, is sometimes I use those bags of that mix noodles, the spinach, orange color and yellow colored bag of noodles...thats really good for this salad.

I love this salad. It's so forgiving and you can add and change it depending on what you have on hand. I usually use rotini, elbow or bowtie. I'v never tried spaghetti so I'll try that next time. I also like to use zucchini. The other thing I've never tried is the Suddenly Salad so I'll take that for a test drive next time.

Connie...thank you for the well wishes...this is a calm week FINALLY...no appointments till next week so Im going to try to accomplish a few things around here...today I mowed all the lawn and boy was it hot outside, but I feel good and the yard looks great and I even had a beer which is a rarity but damn it hit the spot. Tomorrow car dealer to get my stupid mirror on my new car fixed, some idiot hit it in a parking lot sooo Im off to the repair shop. The rest the week one doctor appt for myself, theeeeeeen I may do piddle work around here and vegetate. Lets hope this isnt the calm before the storm and its clear skys ahead.
