Wednesday's Recipe...

I cheated today I copied this one.....but its low fat/ low carb and quick to make....


Aloha Chicken

1 1/2 lb Boneless chicken breast ( 4 breasts)
12 oz. SF, nonfat mango yogurt
3/8 cup fresh cilantro (minced)
3/4 cup canned pinapple tidbits (drained)
1 1/2 butter flavored cooking spray

1. in a small bowl, mix mango yogurt with the cilantro and pineapple tidbits. Cover and refridgerate until needed. Stir the mixed sauce before serving.

2. Coat a nonstick frying pan with the butter cooking spray.

3. On medium heat, fry the chicken breasts for 10-15 minutes, turning as necessary, until chicken is cooked.

4. Servge chicken hot, drizzled with the mixture of mango yogurt sauce.

***Serve with mixed vegtables.

Calories- 185.5
Carbs.- 8.9 g.
Sugar- 7g.
Sodium- 112.7 mg.
Protein- 31.5 g.

kim it sounds yummo! i love chix and i love mango and i love cilantro--now my question would be where to find sf mango yogurt???? i have never seen any mango yogurt! hmmmmmmmmmm may have to shop for this one!!!!!

my hubby lived on hawaii for 11 years- we are always amazed how any food can be called aloha or hawaiian simply by adding pineapple!!!!!

I know isnt that crazy seems like EVERYTHING is called that...hey let me know if you try this recipe and how you liked it..I havent tried it yet either, but it did sound good and easy... and not fattening at all, hope you like it!
