Wednesday's Recipe...
OK this is a cheat week, I copied this out of the Family Circle magazine....I am lazy today fighting an aweful cold and this sounds good....here it is...
Seafood Chowder
1 tbsp olive oil
1 large onion chopped
1 cup of white mushrooms chopped
1/4 tsp salt
1/2 tsp black pepper
2 1/2 cups clam juice
2 cups low-sodium chicken broth
1 med-size Yukon Gold potato peeled and cubed
2 cups cooked shrimp, tails removed "duh"
1 cup chopped imitation crab
2/3 cup light whipping cream
3 cups baby spinach
1. Heat oil in a medium-size nonstick saucepan over medium heat. Add onion,mushrooms, and 1/4 teaspoon each of salt and pepper to the pot; cook, stirring occasionally, for 8 minutes or until softened.
2. Stir in the clam juice, chicken broth, and potato and bring to a boil. Reduce heat to medium-low and simmer for about 20 minutes or unti potato is tender.
3. Puree soup in a blender in batches until smooth. Return to pot and stir in remaining 1/4 teaspoon pepper,shrimp,crab,light cream and spinach; simmer for 10 minutes. Serve warm........
