An early recipe
I'm posting my recipe early this week because with my crazy schedule, I don't know if I'll be able to post on Wednesday. I made this for a family Chinese food potluck yesterday, but I make these for myself on a regular basis. They are VERY high in protein and you can vary the ingredients to taste. My neice and nephew love to help me make these. It's a very forgiving recipe and you can adjust as you like.
Thai Chicken Pizza
Preheat oven to 350 degrees.
Package of 10 small wheat tortillas
Cooking spray
2 - 3 cups of shredded cooked chicken (yesterday I used an apricot glazed rotisserie chicken from the grocery store and it was wonderful)
4 or 5 carrots peeled and grated or julliened fine
1 bunch of cilantro chopped
1 bunch of green onions thinly sliced
2 - 4 cups of shredded white cheese like quesadilla cheese or mozerella or an Italian blend
1 small bottle of Thai peanut sauce (I like a spicy version so sometimes add red pepper flakes if it's not spicy enough)
2 or 3 heaping tablespoons of chunky peanut butter - Sometimes I use Tahini if I have it on hand.
Optional - Chopped roasted peanuts or sesame seeds to sprinkle on top.
Mix the Thai peanut sauce and peanut butter until the peanut butter is blended in.
Lightly spray one side of the tortillas and lay them sprayed side down on a baking sheet. You don't need to do this, but it helps to get a crispier crust.
Spread enough of the peanut sauce to thinly cover the surface of the non-sprayed side of the tortilla.
Add chicken, carrots, onions and cilantro to taste. Top with cheese, in this case, less is better. Add the optional peanuts or sesame seeds if you want, but I usually skip this step.
Bake on the lower or middle rack for 10 to 15 minutes or until the crust is done and cheese melted.
One of these little pizzas is a whole meal for me and I think I figured that one small pizza has about 26 grams of protein.

Earlier this week I made some throw together pizza on those tortilla thingamagings...just the big shell ,sauce,cheese and pepperroni it was pretty good but your sounds awesome.
