Where's The Beef?
Here's an article and recipe from my surgeon's newsletter:
A common myth among many patients is that all beef products are high in fat. If you keep portions small and purchase the leanest meat you can, you will avoid the high fat that comes with some meat products. Beef is a great source of protein, zinc, iron and B vitamins. A deck of cards sized portion of cooked beef round (3 oz.) contains roughly the same amount of fat as the same sized portion of skinless chicken. Here are some tips to make sure you are choosing the leanest meats possible.
½ pound lean top sirloin well trimmed, cut into 1-inch pieces -- 8 pieces
2 tablespoons soy sauce
1 ½ tablespoons olive oil
1 tablespoons rice wine vinegar
Fresh Ground Black Pepper
1 green pepper, cut into 8 pieces
4 small skewers
8 cherry tomatoes
1 small onion, cut into 8 small pieces
Combine first 4 ingredients in bowl. Season generously with pepper. Prepare grill (high heat). Thread beef onto 4 skewers (2 pieces per skewer), threading 2 tomatoes, 2 green peppers, and 2 onion pieces onto each. Grill until beef is well cooked (about 6-8 minutes on each side, turning once during grilling process).

- "Round", "Broil" and "Loin" are the leanest cuts of meat available for purchase.
- Purchase "select" grades. "Select" has less fat between the muscles, "prime" contains the most.
- Purchase lean ground beef. Ground round is the leanest followed by ground sirloin. If you buy ground beef purchase 95-97% lean.

The recipe sounds good I may try those....Ive been using ground turkey instead of ground beef ...in speggetti,meatloaf,tacos,chili, and such...cant tell the difference expect there is no like grissly stuff,and amazingly kids dont complain either. I have been eating alot of steak though lately...its funny used to hate it years ago...go figure. Thank you for the message...I didnt know select was better then prime I would of thought vice versa, I learned something new.
