SOOO GOOOOD!!
Ok. I just wanted to share my new recipie that is absolutely MOUTH WATERING! and VERY good for you!!! and takes no time to make! :)
Get some FRESH salmon. about a pound.
PESTO! if you can find the pesto with pine nuts thats even better (or add your own!) its in a small jar. (Its green. pesto is basil and olive oil and something else... cant remember)
Broccoli
Whole baby Portabello mushrooms (or slices if you cant find whole)
Garlic (If you like but is just as good without it Use diced in the jar its easier and just gives it a slightly better taste for some reason)
Get some Freshly grated Parmesian. (Not from the jar) You can find this where you find the sepcialty cheeses. like the blocks of gouda or port wine cheese etc...it looks like tiny longer slivers of grated cheese not powdery looking.
Cook the salmon... then in a wok (if you have one) or a skillet put in a little oil (they have this new omega 3 oil out now). throw everything in all together and coo****il that brocolli is amost tender. throw in LOTS of pesto.
I swear this take no time at all to make and it is SOOOOO freaking good!!!! Has the omega 3's with the salmon and the olive oil from the pesto and it rocks. I have it at work (thats where i got the receipe) and have it at home and my husband loves it and so do i. I trust you will too if you like salmon. so healthy and absolutely mouth watering :) Make sure you add lots of pesto! gives it all the more flavor!

My husband is on a health food kick and this one above is really so yummy... i'm joining him and hope to loose weight. Help me out if you can with some yummy healthy receipes!
woo hoo!!! DON'T I WISH!!! aside from him being European, his mother spoiled him. so in the sense of cooking and cleaning he is a spoiled European momma's boy. oh he will so love that. hahaha.... I keep telling him he needs to read a few romance novels to understand the position a man should take. I can hear him cursing now. HA! anyhoo... I can count on my one hand (excluding the thumb) how many times my husband has cooked and believe me... I prefer him NOT to cook because of the mess he makes!!! he doesn't understand the ENTIRE concept of cooking THEN cleaning as well. His thing is... I cooked ... you clean. 'sigh'. will they ever learn? ah well... he knows he don't deserve me
He DOES give me nice foot rubs and massages!!! that pretty much makes up for the non cooking cuz he had great hands and stamina.. hahaha... so I'll keep him.
Ok here is my other recipie... I am making this tonight and it's pretty simple. Not sure if you have heard of this or not... the taste the first time may be a bit shocking since it is a dish you wouldn't be used to... but after a few times of eating it i LOVE it.
Its called Baccalauh... which is salted cod. i can only find it in one grocery store freshly salted in the bins around here but usually it is packaged in plastic in the refrigerator section of your grocery store. You can always ask for salted cod.
So you rinse the cod off and then put it in water for 24 hours and change the water 2-3 times.
take it out and boil it in water on medium for aprox 30 minutes. (best bet is to bring it to a boil then adjust the temperature to a nice simmer.) thats actually better.
The next part of the dish is boiled potatoes. I like yellow/gold potatoes. Peel and quarter them in nice chunks then boil them. then put olive oil on them and salt.
Next is green beans... cook them and use a little vinegar for flavor and a little salt.
some use a boiled egg to place with the dish.
Take the fish out and put on the plate with the potatoes and all that and drizzle olive oil on the fish and enjoy!
its definitely different.
now Caldo Verde is an AWESOME soup. Ill save that for another time because that is a pain in the a$$ to make but it is SOOOOO GOOD! its kale and potato soup.
