Easy Chicken Recipe
I think I told you guys before that I do much better with my food when I plan. I've been trying to cook on the weekends and package servings individually for the week. I made some crockpot chicken last night that was pretty good and thought I'd share. Mind you, I never measure anything so you'll have to eyeball it.
About 7 or 8 skinless boneless chicken breasts with every speck of fat picked off.
2 cans of stewed tomatoes
1 can of tomato sauce
pound of mushrooms chunked
1 onion chopped
lots of garlic
lots of sweet basil
italian seasoning
garlic salt (did I mention that I like garlic?)
Threw the mess in a crockpot on low for 5 or 6 hours and let it do its thing. When the chicken was tender and falling apart, I mixed in a little cornstarch w/ water to thicken the sauce and called it good. It was sort of a chicken cacciatore dish with none of the superfluous calories. My best guess is that a cup is around 200 calories, almost no fat and about 35 grams of protein. You could serve it on pasta or rice to the family, but I don't even eat regular spaghetti sauce on pasta so this works for me. I'm thinking of adding zucchini next time. What worked for me is that the chicken was very moist and didn't get stuck or make me feel icky like chicken normally does.

this sounds wonderful i've added the ingredients to my shopping list!
i cook macorni regularly...for the birds! hahaha Paulie the wonder bird loves pasta. When I go to an italian restaurant I usually bring the pasta that goes with a dish home for them. at one time the pasta was all mine but i dont care for it anymore.
i do belive that if you go long enough without a food you get to the point were you remmber liking it but just don't care to have it anymore.
chocolate is like that for me too. i use to survive on candy. loved everything chocolate. baby ruth, reeses, hersheys. now even a sugar free candy bar isn't all that! cookies now thats somethign i have a difficult time with. i try to stay away from the cookie isle.
its even best for me NOT to try to come up with legal cookie recipes cause i'd eat them all.
I wonder why cookies are my evil food?
A wild guess - cookies represent comfort for you. Think back on your childhood and see if there's a connection: cookies-to-comfort. It's worth a shot! If you can pinpoint the connection, you might have a better understanding of how to deal with your cravings. For now, I'm suonding Connie's battlecry: "I DON'T eat (you fill in the blank) M&M'S!!! Hey, Pammie, I want you to COMMIT to going to the Middlesex SG meeting on 1/14, I'm a co-leader and I could really use your help and support! We could even meet in the cafeteria for a lite dinner before the meeting (Middlesex has the BEST chili in CT!) - what do you say??? Reenie
